Ingredients:

1 teaspoon coriander seeds
1/2 teaspoon fresh white peppercorns
5 cloves garlic
1 cup sugar
1 3/4 cups kosher salt
1/4 cup fresh cilantro, chopped
2 tablespoons grated fresh lemon zest
18 large Alaska Scallops
1/2 cup balsamic vinegar
1 tablespoon olive oil

Directions:

First, you must marinate the Alaska Scallops. Grind the coriander seeds together with the garlic cloves and peppercorns in a spice grinder, or use a mortar and pestle. When fine, stir in the kosher salt, sugar, cilantro, and lemon zest.

Cut the muscles from the scallops so that you are working with the best meat. Then place the scallops in with the salt mixture and chill for a half-hour, longer if you want your Alaska scallops to be truly ripe with taste. Cover and let sit for the half-hour, then rinse in cold water and dry thoroughly with paper towels.

Line a tray with foil and place your wood chips over the smoker pan. Place the tray on top of the chips, and lightly oil the rack with olive oil, then place it in the tray. Season the scallops with a bit more salt and pepper before placing them on the olive oil coated rack. Place your smoke on the stove and heat on a medium-to-high heat, until the chips begin smoking just a bit. Turn down your heat until it is at a low-medium point, then smoke the scallops for 15 minutes, with the cover on. Remove the smoker.

Boil your balsamic vinegar over a medium heat for three minutes, until it is reduced. Keep the vinegar warm and covered, then heat the remainder of your olive oil in a medium-sized skillet over a high heat, until just smoking. Sear the Alaska Scallops until browned on both sides. This should take about three minutes, but could take as many as five, depending on your heat.
